Temp gauge

I've had it a few times where I've been on the motorway or dual carriageway cruising at 60/70mph barely pressing the throttle and then the temp gauge would just start to drop. I haven't noticed the heating being affected but I haven't really been using the heating in recent weather. When I get to a idle it would start climbing back up normally, but it can start climbing on its own while still driving.

Could it be the temp sensor having some crap on the end of it sending a weird signal?

Temp sensor for the dash gauge is only cheap I believe, swap it out and go from there.
