The ring use is the key as its such fast place and lots of surface changes, lumps and bumps so you need plenty of travel which i think it something the Nitron can suffer with, i would go with Ohlins...

Yes can be a minefield getting wheels that fit in all areas, hence sticking with oem is easiest option, Evo5 or 6 oem wheels with slightly narrower tyre and you should be good, maybe slight arch roll...

Evo4 and any larger than stock 16" wheels is tricky to get clearance on rear, why did you buy wheels that dont fit and need 20mm spacers ?

Easiest option when fitting brembos is set of Evo5/6...

As above they are just the anti-rattle shims and brake kit will work fine without them, you may get a little pad rattle on unven road surfaces but nothing too bad usually and i wouldnt worry.
